Our organic olives come exclusively form our own estate, where we carefully manage every stage of cultivation. Harvested in the first half of October to preserve their freshness and maximize their polyphenol content, they are milled daily under carefully controlled temperature and oxygen conditions.
The oil is immediately filtered, then expertly tasted and blended to create the finest possible expression of each label before bottling.
