The hard work and dedication to achieving the highest possible quality: organic olives exclusively from the Podere, cultivated directly at every stage of growth, harvested during the first half of October to ensure the highest possible polyphenol content, pressed daily at controlled temperatures and oxygen, immediately filtered, and finally bottled after tastings to obtain the best possible blend for each label.
